| Soil: Clay, silt and stony soil | Upbringing: The grapes are harvested by hand, de-stemmed, crushed and put into the fermentation vats. The fermentation lasts between 21 and 25 days depending on the variety and the fermenting musts are pumped over the cap everyday. The wines undergo normal malolactic fermentation. For the ageing, the different base wines are racked and blended in the spring and the aged in cement tanks and used 2 to 4 year old oak barrels and coated with egg white if necessary. | Critic Reviews: "Inky black.
