Grapes are harvested by hand in three stages during late October. Maceration of de-stemmed grapes lasts 24 hours followed by pressing and stabulation over the deposit from the musts for 10 days. The fermentation takes place in new oak barrels and in tanks over one month with temperature controlled at 18°C.
