Tasting Notes: A serious, complex, spicy white offering quince, buttered toast, banana, pears and citrus with a mineral finish (amongst other things). Only 900 bottles are made each year. | Drinking Dates: 2011 to 2014 | Cépagement: 50% Grenache Gris, 30% Macabeu (Viura) and 20% Carignan Blanc (harvested at 12hl/ha) | Soil: Limono-argileux | Upbringing: Sustainable viticulture, hand harvested. Fermentation for two weeks at 20°C in barrel, followed by lees stirring for 8 weeks. Natural malolactic fermentation. Aged for nine months in French oak, 25% new.
