Tasting Notes: Stunning Merlot with a near perfect mouthfeel, this is soft, rich and powerful all at once. Still youthful, the oak dominates the palate at present (in 2013) but, given a couple of years, the fruit will come to the fore with its distinct notes of black berries and aromas of old roses. Very long with a lovely tannic wrap. | Drinking Dates: 2015 to 2025 | Cépagement: 100% Merlot | Upbringing: Manual harvest. The vinification process is directed by the oenologist Alberto Antonini who aims to create wines that reflect the terroir. The freshly picked grapes are de-stemmed then grapes are manually selected on a sorting table. Maceration and fermentation in French oak vats at a controlled temperature. Daily pumping over to extract the best from the grapes; racking with manual press at low pressure then the wine is transferred by gravity in French oak barrels for aging for at least 18 months. Once bottled, the wine takes a further refinement for at least 8 months.
