We discovered this stunning balsamic vinegar at lunch in Bologna and had to track it down. The flagship product of Neromodena is Tondo, aged 3 years in barrels, it has distinctive coffee and caramel notes with hints of vintage Madeira. Its perfect balance of sweetness and acidity, together with its 1.34 density make it one of the slowest pourers, ideal for salads, meats, fish, cheese, even ice cream.

Aged 12 years, this is the "3 Gold Medals" Balsamic Vinegar of Modena PGI from Italy's oldest producer of balsamic vinegars. Dedicated to Riccardo Giusti who created the recipe at the beginning of the 20th century, this product is born from sweet, sundried grapes and aged in series of antique small casks, dating back to the 1700s. Extracted in a limited quantity, once a year. Aromas and flavours of plum jam and red fruits intertwine with hints of honey and vanilla in a considerable dense and sweet dressing. It is perfect as a fresh dressing for various savoury or sweet dishes.
